Delicious Chicken Cacciatore Recipe

Chicken Cacciatore in Italian means a meal prepared in a “hunter style”. The most popular kind of Cacciatore dish is made with braised chicken. A number of dishes including chicken, beef or veal use the name cacciatore. All it really means is that the dish is cooked with tomatoes. The rest of the ingredients are up to the cook and can include other ingredients like herbs, onions, mushrooms, bell peppers and sometimes wine.

Prep time – 15 minutes
Minimum cooking time – Low Setting for 4-6 hours or High Setting for 2-3 hours
Makes 4 servings

  1. 4 chicken breast halves – Without the skin and bones
  2. 3 Tbsp olive oil
  3. 3 garlic cloves, peel and mince
  4. 1 large onion, peel and dice
  5. 1/2 green bell pepper, remove seeds and ribs
  6. 1 8 oz can tomato sauce
  7. 1/2 cup dry white wine
  8. 1/2 cup chicken stock
  9. 2 Tbsp fresh oregano or 2 tsp dried
  10. 1 Tbsp fresh rosemary or 1 tsp dried
  11. 1 Tbsp fresh thyme or 1 tsp dried
  12. 1 bay leaf
  13. Salt and pepper to taste
  14. 2 cups cooked rice or orzo (a tiny rice shaped pasta)

Over medium heat, heat oil in a medium sized skillet. Add garlic, onion and green bell pepper. Cook and stir for 3 minutes or until you see the onion turn translucent. Add the mixture to the slow cooker.

Arrange the chicken on top of the vegetables. Combine the tomato sauce, stock, wine, oregano, thyme, rosemary and bay leaf in a small bowl. Pour this mixture over the chicken pieces. Cook on Low for 4-6 hours or on High for 2-3 hours or until chicken is tender and no longer pink. Discard the bay leaf, season with salt and pepper and serve your dish with rice or orzo.
