Old Fashioned Beef Stew in a Slow Cooker

ld fashioned beef stew, cooked in a slow cooker is a great way to tenderize inexpensive, stewing beef. I love the aromatic,  rich flavor of the beef stock combined with the earthy flavors of the root vegetables. The secret to a tasty stew is sauteing the vegetables and browning the meat before adding them to the slow cooker.

Prep time: Around 20 minutes
Cooking time: 8-10 hours on Low 4-5 hours on High
Makes a total of  6 servings

Beef Stew Ingredients

2 lb stewing beef – Trim fat and cut into 1 inch cubes
2 Tbsp vegetable oil
2 garlic cloves – Peel and mince
1 onion – Peel and chop
1/2 lb white mushrooms – If large rinse, trim and half them
3 carrots – Peel and cut into 1/2 inch slices
2 celery stalks – Trim and slice
4 large red skinned potatoes – Scrub and cut into 1 inch cubes
1 large turnip – Peel and cut into 1 inch cubes
1 10 oz box of frozen pearl onions – thawed
1 cup frozen peas – thawed
3 cups beef stock
2 Tbsp Worcestershire sauce
2 Tbsp tomato paste
2 Tbsp softened butter
3 Tbsp all purpose flour
1 bay leaf
1 Tsp dried thyme or 1 Tbsp fresh
Salt and pepper to taste

Step 1 – Broil beef  for 3 minutes
Preheat your oven broiler and use aluminum foil to line your broiler pan. Place beef on the pan in a single layer. Broil  for 3 minutes per side or until  lightly browned.  Add beef into the slow cooker along with any juices that have collected in the pan.

Step 2 – Sautee vegetables for 3-5 minutes
Heat oil in a medium skillet over medium heat. Now add mushrooms, onion and, garlic. Stir for 3-5 minutes or until mushrooms are soft and the onion is translucent. Add them to the slow cooker along with the stock, pearl onions, turnip, carrots, potatoes and celery.  Now add the Worcestershire Sauce, tomato paste, bay leaf and thyme.

Step 3 – Add all ingredients to crockpot and cook the for required time
Cook the stew on Low for 8-10 hours or on High for 4-5 hours or until beef is very tender.  I generally prefer to cook most vegetable,  raw meat combination at least 8 hours on the Low setting. This gives the meat time to tenderize, vegetables time to soften and all the flavors to blend together.

Step 4 – At the last hour of cooking, add the thawed peas. ( If you have your slow cooker set to Low, now is the time to raise the heat to High)

Step 5 – After cooking time has completely elapsed, add the flour butter mixture.
In a small cup, mix the flour with softened butter and create thick paste. In small spoonfuls, stir  the flour-butter into the slow cooker. Cover and cook for an 10-15 minutes more or until you see the juices slightly thickened and bubbling. Last but not least, take out the bay leaf and season with salt and pepper.
