Simply Delicious Chili Con Carne

This Chili Con Carne recipe is a little bit more labor intensive than my lastbeef chili recipe. Of course the trade off is that it’s absolutely delicious! There are a few extra steps to brown the peppers and ground beef. But trust me…it’s so worth it!

Prep time: About 20 minutes
Cooking time: 6-8 hours on Low, 3-4 hours on High
Makes a total of 4-6 servings

Chili Con Carne Ingredients

1 1/2 lb lean ground beef
3 Tbsp vegetable oil
1 large onion – peeled and diced
4 garlic cloves – peeled and minced
1 jalapeno chili pepper – Remove seeds and chop fine
1/2 green bell pepper – Remove seeds and ribs and finely chop

1 Tbsp ground cumin
3 Tbsp chili powder
1 8 oz can tomato sauce
2 14 oz cans diced tomatoes -drain
1 15 oz can red kidney beans – rinse and drain
Salt and cayenne to taste

Condiments to add to plated chili
Grated Monterrey jack cheese
Sour cream
Chopped onion

Step 1 – Brown the peppers in the skillet

In a medium skillet heat oil over medium heat. Add the jalapeno pepper, green bell pepper, onion and garlic. Cook and stir for about 3 minutes or until you see the onion become translucent. Stir in round cumin and chili powder. Cook and stir continuously for 1 minute. Spoon the mixture into the slow cooker.

Step 2 – Brown the ground beef in a skillet

Place ground beef into the skillet and break up the lumps with a fork. Cook for 3-5 minutes or until it’s fully browned. Remove beef from the pan and place it in the slow cooker.

Step 3 – Add all ingredients to the slow cooker and cook

Stir in kidney beans, tomatoes and tomato sauce. Cook on Low for 6-8 hours (my preferred method) or on High for 3-4 hours. Season with salt and cayenne pepper.

Chili Con Carne like any chili for that matter, is EXCELLENT with the added toppings of sour cream, onion and cheese to your plated food.  Although if you’re watching your waistline you might want to skip this step
