Tasty and Nutritious Slow Cooker Turkey Chili

This Turkey Chili is one of my favorite slow cooker recipes. It’s great if you’re looking for a low fat meal that’s easy to prepare yet hearty and healthy.  After it’s done cooking you can top it with a dollop of fat-free sour cream or yogurt. Simply delicious!

Prep Time: About 15 minutes
Cooking time: Low setting – 6-8 hours / High setting – 3-4 hours
Makes around 6-8 servings

Ingredients

1 1/2 lb ground turkey
1 red bell pepper – Remove seeds and ribs then chop
1 onion – peel and chop
2 14.5 oz cans diced tomatoes
1 15 oz can red kidney beans – drain and rinse
2 cups cooked white or brown rice
3 garlic cloves – peel and mince
3 Tbsp chili powder
2 Tbsp ground cumin
Salt and cayenne to taste

Turkey Chili  Directions:

In the slow cooker, combine the following: turkey, red bell pepper, onion, garlic, cumin, chili powder and tomatoes. Stir well and cook on Low setting for 6-8 hours or the High setting for 3-4 hours.

At the end of the cooking time if you’re cooking on the Low setting, raise the heat to the high setting and add the red kidney beans. Cook for an additional 20 minutes.  Season it with salt and cayenne, serve over rice or with a dollop of sour cream. Try it…it’s the best!

This Turkey Chili can be made into a into a finger food! Darn it I’m drooling already! Pile up some large nacho corn chips on your broiler dish. Add some chili and top with grated Monterey Jack Cheese. Place under the broiler until your cheese is melted. By the way, I will be adding many more slow cooker recipes in the coming weeks!
